Taco Casserole

Taco Casserole

1 1/2 lbs. lean ground beef or turkey

1/4 cup Taco seasoning mix

1 15-16oz can pinto beans, drained and rinsed

1 15oz can tomato sauce

1 11oz can corn, drained

1 cup shredded cheddar cheese

1 cup coarsely crushed tortilla chips

Assorted Toppings: sour cream, sliced green onions, shredded lettuce and chopped tomatoes, chopped onions.. (all optional)

Preheat oven to 400 degrees

Brown meat in a large skillet, Drain off fat.

Stir in seasonings mix, beans, tomato sauce and corn ( I also added chopped onion) Bring to boil. Reduce heat to low, simmer for 5 minutes.

Spoon mixture into a 2-quart baking dish. Sprinkle with cheese and tortilla chips.

Bake for 5-10 minutes, or until the cheese is melted.

Serve with assorted toppings, if desired.

Tater-Topped Casserole

Delicious, Kid Friendly, and Easy to Make!!

Tater-Topped Casserole

What You Need
1 lb. ground beef
1 small onion, finely chopped
1 can (10-3/4 oz.) condensed cream of mushroom soup
1/4 cup milk
1 cup frozen mixed vegetables
1 cup KRAFT Shredded Cheddar Cheese
1 lb. (1/2 of 32-oz. pkg.) frozen bite-size seasoned potato nuggets


Make It
HEAT oven to 375ºF. Brown meat with onions in large skillet, stirring occasionally; drain. Spoon into 2-qt. casserole dish. *(I added chopped green onions to meat as well)
MIX soup and milk; pour over meat mixture. Top with layers of vegetables, cheese and potatoes.
BAKE 45 min. or until potatoes are golden brown and casserole is heated through.
