Island Pork Tenderloin

Island Pork Tenderloin
2 tsp salt
1/2 tsp black pepper
1 tsp cumin
1 tsp chili powder
1 tsp cinnamon
2 pork tenderloins (2-2.5 lbs)
2 TBS olive oil
1 cup packed DARK brown sugar
2 TBS finely chopped garlic
1 TBS Tobasco sauce

Preheat oven to 350. Make spice rub with first 5 ingredients. Rub on pork. Heat oil in pot then brown pork. Put sugar, garlic, and Tobasco in bowl and pat into pork. Put in oven and roast for 30 minutes, then let stand for 10. Cut and serve. (You can pour the extra juice over the meat.)

1 cup Jasmine rice
2 cups (1 can) coconut milk
3/4 cup sugar
3/4 cup milk
