Zucchini Quiche

Zucchini Quiche

2-3c thinly sliced zucchini
1 small onion, chopped
4-5 eggs
1/2 c bacon, cooked and chopped (opt)
1t parsley
1/4c Parmesan
1/2c olive oil
salt and pepper

Mix ingredients. Poor in greased pan.
Bake at 350 for 30 minutes
